Doc’s Maple Syrup is a family run business that has been producing pure New York State maple syrup for seven generations. James Carpenter and his family first occupied the farm in 1830. Carpenter built a log cabin for him and his family that is still on the property. Since then Carpenter Farm has remained owned and operated by the Carpenter family in Woodhull, New York. Over the years there were crops grown, farm animals raised, and cows milked. Now the business of the farm is their pure New York State maple syrup. David Olin Carpenter was part of the fifth generation to own the farm. He was a kind man that meant a lot to his friends, family, and the local NY maple syrup industry and that is why they named their maple syrup DOC’s after him.

Doc became fascinated with maple syrup when he was about six or seven. Growing up on a farm in the forests of New York, DOC knew many families with maple syrup production companies. At the young age of nine David Carpenter decided to start producing his own syrup in his kitchen. He figured out how to tap one of the maple trees on the farm. He extracted as much sap as he could, and he was officially in business. His mother let him use her wood-burning stove to allow him to get temperatures high enough to boil his sap into syrup. He always joked that while his first syrup experiment was successful, he also managed to steam off his mother’s kitchen wallpaper.

Thousands of maple trees have been identified on the property, miles of tubing have been placed, and when the trees begin to thaw from the winter the sap begins to collect. They are able to hear and see the sap moving through the tubing heading towards the sugar shanty. The thousands of gallons of sap go into large metal cooking bins where they boil the sap down to make the syrup. This syrup is 100 percent pure certified organic maple syrup. Docs Maple has been using the same recipe for seven generation of Carpenters and the maple is still made in the small batch method, with the whole process from collection to bottling remaining on the farm.
